(Hilton Kuala Lumpur pic) KUALA LUMPUR: Ramadan is a time for reflection, gratitude and, of course, gathering around the table. This year, Hilton Kuala Lumpur invites guests to do just that with its themed celebration, “Jamuan Penuh Makna, Raikan Detik Bersama” – a feast that blends cherished traditions with contemporary flair. Designed to honour Malaysia’s rich culinary heritage, the experience brings families and friends together in a setting where every detail – from the décor to the dishes – reflects warmth and togetherness. Now in its third year, the hotel’s sustainable Ramadan initiative continues to evolve. A highlight this season is Keropok Citarasa Laut, a crisp golden cracker made from repurposed seafood shells. The shells are cleaned, roasted, dehydrated and ground into powder before being mixed with tapioca flour, coriander, oyster sauce and white pepper. The dough is steamed, sliced and lightly fried, resulting in a delicately crunchy snack with a savoury depth. Throughout February and March, you can break fast with over 180 dishes, ranging from roasts and curries to starters and seafood. At Vasco’s, over 180 dishes set the stage for a vibrant iftar spread running throughout February and March. Guests can begin with classics such as golden snapper otak-otak with passion fruit salad, homemade urap daging pekasam, and young mango salad with dried scallops. Seafood lovers will find plenty to savour, from the oceanic bounty on ice and pan-seared sea bass to flower crab masak lemak nenas. The premium selections are responsibly sourced and carry ASC-, BAP- and MSC-certifications, underscoring the hotel’s sustainability efforts. Seafood lovers can enjoy an oceanic bounty on ice or traditional-style Malay dishes. For heartier appetites, carving stations feature HALAL-certified Australian whole lamb with Moroccan chermoula, six-hour slow-roasted venison timorensis and smoked paprika beef shank. A farm-to-table corner showcases heirloom vegetables from Cameron Highlands, gourmet mushrooms and organic beetroot, paired with smoked cheese dressing for a rustic yet refined touch. No Ramadan feast is complete without dessert. Sweet endings include assorted baklava and durian-inspired treats such as éclairs, crêpes and serawa pulut durian Musang King. The much-anticipated durian tempura also makes a return, promising a crispy, creamy finale.
